Tapioca Carrot Muffins

Inspired by the traditional Brazilian cheese bread but with a TREAT twist, these muffins carry the natural sweetness of carrot and the comforting texture of tapioca.

Equipment

  • Muffin tin

  • Pastry brush

  • Large bowl

  • Whisk or immersion blender

  • Carrot grater

  • Spatula


Ingredients

Tapioca flour (or a mix of sweet and sour cassava starch)

2 cups

Milk (any kind you prefer)

¾ cup

Baking powder

1 tablespoon

 Salt

½ teaspoon

Freshly ground black pepper

¼ teaspoon

 Butter

8 tablespoons (1 stick)

Nutritional yeast

3–4 tablespoons

Grated carrot

1 unit

Vegetable oil (for greasing the pan)

2 tablespoons



Processo


  1. Preheat the oven to 200°C (390°F) and grease the muffin tin with 2 tablespoons of vegetable oil.

  2. In a large bowl, combine the tapioca flour, milk, baking powder, salt, pepper, butter, and nutritional yeast.

  3. Add the grated carrot and mix well with a whisk or immersion blender for about 5 seconds, scraping the sides with a spatula to fully incorporate.

  4. Pour the batter into the muffin tin, filling each cup about ¾ full.

  5. Bake for approximately 20 minutes, until the muffins are lightly golden and puffed.

  6. Remove from the oven and let cool for a few minutes before serving.

Notes


  • Vegan and light recipe

This recipe is a variation of traditional Brazilian cheese bread — we swapped the cheese for carrot and nutritional yeast, making it vegan and light.


  • Add specials for new flavors.

Try adding spices or herbs: cinnamon, nutmeg, fresh herbs, or even lemon zest. Each variation brings a new flavor.


  • Increase the nutritional value.

 Adding seeds like chia, sunflower, or pumpkin boosts nutrition without changing the taste.
