Ingredients
Carrots | 4 units |

Celery (without the leaves) | 1 stalk |
Onions | 2 units |
Garlic cloves | 4 units |
Cumin | ½ teaspoon |
Turmeric | ½ teaspoon |
Olive oil | 3 tablespoons |
Cold butter | 2 tablespoons |
Hot Water | 3 cups |
Salt and pepper | To taste |

Process
Preheat the oven to 220°C (430°F).
Prepare the vegetables: peel the carrots and slice them diagonally; cut the onions into wedges; chop the celery; keep the garlic cloves whole.
Spread everything on a large baking sheet. Drizzle with olive oil and season with cumin, turmeric, salt, and pepper.
Toss with your hands so everything is well coated, and spread the vegetables out so they can brown more easily.
Roast for about 40 minutes, turning the vegetables halfway through. Meanwhile, heat the water.
Transfer the roasted vegetables to a blender, add the hot water, and blend until smooth.
Add the cold butter and blend a little more — it gives shine and makes the soup velvety. Adjust the consistency with a bit more water if needed.
Serve warm with yogurt and toasted seeds.
