Inspired by the traditional Brazilian cheese bread but with a TREAT twist, these muffins carry the natural sweetness of carrot and the comforting texture of tapioca.

Ingredients
Tapioca flour (or a mix of sweet and sour cassava starch) | 2 cups |

Milk (any kind you prefer) | ¾ cup |
Baking powder | 1 tablespoon |
Salt | ½ teaspoon |
Freshly ground black pepper | ¼ teaspoon |
Butter | 8 tablespoons (1 stick) |
Nutritional yeast | 3–4 tablespoons |
Grated carrot | 1 unit |
Vegetable oil (for greasing the pan) | 2 tablespoons |
Processo
Preheat the oven to 200°C (390°F) and grease the muffin tin with 2 tablespoons of vegetable oil.
In a large bowl, combine the tapioca flour, milk, baking powder, salt, pepper, butter, and nutritional yeast.
Add the grated carrot and mix well with a whisk or immersion blender for about 5 seconds, scraping the sides with a spatula to fully incorporate.
Pour the batter into the muffin tin, filling each cup about ¾ full.
Bake for approximately 20 minutes, until the muffins are lightly golden and puffed.
Remove from the oven and let cool for a few minutes before serving.

Vegan and light recipe
This recipe is a variation of traditional Brazilian cheese bread — we swapped the cheese for carrot and nutritional yeast, making it vegan and light.
Add specials for new flavors.
